Risers of brick stairs

The outdoor steps to our split broke. Took a while but finally fixed it ... Replaced field stones with granite, replaced some loose bricks, reprinted all joints

Now, I need to repair the risers. The risers are broken in some places. I chiseled out the pieces. Now the big questions are
1) what do I use to repair the risers -- regular mortar or something else ?

2) how to apply mortar ( or whatever I use )

3) how to make it a smooth, level surface. Asking because whenever I try to apply mortar to a vertical surface, it falls of

Sorry for the delay ... here are pictures. The bricks have been repointed using quikrete mortar mix and need to be cleaned (using 50% acid+50% water -- right?)

My question is what do I use for risers and how do I smooth it.

I purchased a tub ready mix quick dry but did not open yet.
