What's the right way to fix this corner pop on my foundation?

Interesting, I have similar issue, but just the brick which spalled, assume was getting wet from water downspout leak (which may be your issue also,

Ive fixed the gutter joints and need to cut out the old brick and replace.

For the foundation a patch will be difficult, concrete is not repair friendly!

It's a little hard to tell from the pic just how big of an area has popped loose.
I'd remove the loose brick/concrete and then form up around the missing concrete, put in some cut nails or tapcons and then pour in concrete. Mortar in the brick when dry. But then I'm just a painter, masons might have a better idea.
