Matching subfloors

Hi everyone. I feel like I should know the answer to this so I apologize if this is a silly question. I'm fixing some hardwood flooring in an older home. I'm patching in spots where a chimney was removed. The old sub floor is full inch planks. I can't find true 1 inch ply and so my finish floor is 1/4 inch low in the patches. What's the proper way to make this patch? Do I need to go find some old planks?

You could have doubled up on 1/2" plywood. 1/4" ply may or may not working depending on what you intend for the finish floor.

I would have probably used 3/4" ply + 1/4" ply.

Or if it was planks, use 5/4 boards.
