Tiling OVER Drop-In Sink ?
I'd like to duplicate the look of an undermount sink, but my cabinet I am
installing in would need too much surgery to make it work. I'd have to
cut out some structural framing - not interested in doing this. But, I'm
wondering if I can tile over the top of the sink to mimic the undermount
look - using the right thickness of hardi-backer. Any suggestions are
reatly appreciated. I'm not sure if this approach is advisable. thank you.

I would advise against. One of the biggest reasons/questions are how will you finish off the tile edge in the sink? Normally with an undermount sink you have the polished edge of stone or a corner tile. In your case you could use a corner tile and let it overhang the sink but there wouldn't be anything supporting the edge of the tile hanging down so it could be easily damaged.

Time to move on to plan B, this will not end pretty.
The purpose of a drop in sink is to hide the unsightly edges of the tile cuts underneath. You will be doing the exact opposite.
