Pool pump & booster pump
I have a variable speed pool pump pulling 8A pr/line on a 20A double pull breaker. I am adding a polaris booster pump that draws 3.2A wired for 240V. I know I'll need to change this over to a 30A double pull breaker. My question is do I need to change to #10 wire for both, or can I run #12 from the breaker to each pump?

These can remain on a 20A circuit with #12 wire. As long as each pump current is less than 50% of the circuit ampacity and the total current of both pumps is less than 80% of the circuit ampacity it is OK to combine them. In your case, each pump is less than 10A and both both pumps are less than 16A.
