How to wire water heater?

Guys, I am stumped. I have an electric water heater. I had a roof leak and got water in the top of it where the wires are. I cleaned all water out and dryed it. Here is my problem.
From the breaker I have a Red, Black, White and ground wire.
Water heater only has a Red and Black and ground.

I hooked everything up except for the white and it sparked against the black and white wire in the middle of the wires.

What do I do with this white wire?

Cap off the white with a wirenut. How was the white handled originally at the heater?

it sparked against the black and white wire in the middle of the wires.
Trying to figure out what happened there. Did the white wire touch the black wire even though the black and red wires should be capped with wire nuts ?
