IP camera wiring
I am considering installing the IP (POE) cameras.
I am planning on getting my house exterior painted.
Should I run all the ethernet wires, tack them down under the eaves BEFORE the painting starts, or wait till the painting is done, THEN run the wires ?
My thoughts were to put the wires down first before the painting so the wires will become the same color as the eaves, and more concealed..but please let me know if the other way would be better for whatever reasons.

I'd probably wait until after the painting. With the wires in place there may be a bit of siding under them that doesn't get painted and then if you find out you have to move one or change one you've got a strip of unpainted siding showing. You want the siding to be smooth and nicely finished.
It will be easy enough to paint the cables afterward if you decide it's needed. Best would be to use cable that blends in a bit if possible and then not paint it.
But not a huge deal either way.

Standard Cat5E cable is not designed for outside installation. The sun will cause the insulation to crack. I use gel filled cable when it needs to be exposed to the elements.
For most of my residential camera installations I run the cable either under vinyl siding or I drill up thru the soffit into the attic. If there is no attic I fish thru the soffit.

any possibility to post a picture so I have a better idea how an ideal installation ought to look like ?
I was under the impression that i would simply tack the wires under the eaves and find a common place for all 8 wires (I'll have 8 cameras) to enter the house, most likely the garage.

There is no "ideal" installation. Actually an ideal installation is where the cameras are minimally visible.
Good location. Effective, easy to get to from attic and out of sight.

You can get outdoor rated CAT-5/6 wire. It's a bit more expensive, but it's still better to mount it so that it's out of the weather/sun and not in sight. Tucking it into the soffit J-channel is probably the smart course of action.
