Growing watermelon

I planted watermelon (sugar baby and one other mini melon variety) for the first time this year. I got a really good yield for the small area I planted but I am not sure when to harvest. I picked two last week whose stems were withering and cut them open. They were very pink and really, really juicy inside but they had very little taste and nearly zero sweetness.

Did I harvest too soon or is something else needed to get more sugar in the fruit?

I'm in zone 6.

They like sandy soil and lots of water. Speed of growth can be a factor... they like hot weather in June, July, August... and full sun. Too much shade is bad. If they got planted too early and were stunted by cold weather in June and grew too slowly or if there is too much rainy cloudy weather as the fruit sets on it can affect the crop. Type of soil is a big factor though. I have never had good success with miniature varieties. I stick with black diamonds... always good.
