I am connecting a new Kitchenaid gas stove to a large liquid propane tank. I can find plenty of conversion kits that are for connecting you LP grill to a natural gas system, but none that say specifically to go the other direction. Do I simply just run the same conversion kit backward?

There should be specific conversion instructions included with your stove. Many stoves come with the kit to convert them from one fuel to the other or it's ordered as a separate item.
When I remodeled my kitchen the stove came for natural gas and the propane conversion kit had the instructions and parts needed. I had to make an adjustment on the regulator on the appliance (hidden behind the bottom oven drawer) then replace the jet for each burner.
