Replacing Kitchen range hood vent
I have an old Broan range hood vent and want to replace with a cosmo unit. The current is hard wired with two separate “white “wires coming in from the wall. ( as in 2 hot, 2 neutral and 2 ground)..one goes to the fan and one to the light. My question is, can I remove and install receptacles instead as the new range is a plug in cosmo unit?. If I can , do I need two separate to accommodate each separate wire?.(15 amp?

Usually when there are 2 separate cables coming in for the hood, it's because the range hood light is controlled by another switch.
In your case, presuming you don't want to do that, you can run the whole new hood off either one of the circuits. Just run the other into the same box and cap the hot/neutral separately.
(This is assuming the range hood doesn't require its own dedicated circuit. Most don't... but I'm sure there are some super ones that do)
