What to use for mosture proofing pine board..

I'm putting pine tongue and groove plank board on one of my bathroom walls, staining and using poly on the front side, what can I use to seal the back of the board going against the wall? The plank board will be going on a warm inside wall and I have excellent ventilation inside the bathroom. I'm looking for something to just seal or semi waterproof the back of the boards just in case any moisture would get behind them. I was think about using a satin finish poly on the back of the boards just to seal the pine, would that work?

any oil based poly will seal it up, 1 coat is all you need

I forgot one other thing, I'll use oil base poly on he back of the bare pine, would it be alright if I use water base poly on the front stained finish, I heard if I use oil base it may turn my stain darker or yellow over time.

Don't forget to do the ends as well. If you are going to do the finish coat on the front after they are installed that should seal the sides where they join. If you prefinish the boards, do the sides as well as the ends (6 surfaces) before installing.

I would stick with oil based especially in a wet environment. Trying to coat part of the boards in oil based and part in water based is a mess waiting to happen.

I didn't want the wall panels to look to shiny so I was going to poly the front in a satin finish, can I use satin finish poly for the front and back? Going to pre stain and poly the boards first before installing, I'll be sure to do the ends too..

Satin finish for both sides will be fine. The sheen of the poly does not affect the sealing properties.

Oil base poly seals/adheres better than water base. The only possible drawback to oil poly is it will deepen the color naturally in the wood and does amber some over time. Oil base satin sheen is only slightly higher than a water base satin poly. A small enough difference that many can't spot it.
