That's almost impossible to answer without more info. How long will it be below freezing? what areas of the plumbing are you worried about? will the pipes be drained? or just shutting off the water flow?

You can leave the main water off for years. You'd definitely want to flush the system after a few months, but there's nothing wrong with shutting off the water.
BUT, if there's still water in the pipes, the water can still freeze and cause burst pipes.
Houses that aren't used in the winter are usually winterized, where all the water is blown out of the pipes using compressed air, and water in the traps is replaced with RV antifreeze.
