black bean skin coming off right away

black bean skin coming off right away

As soon as I started soaking my black beans, the skins started peeling off, and the beans started splitting.

I want to emphasize, this happened right away. The beans had not been soaking for anytime at all.

Is this a sign of old beans? Or something else?

I'd guess old beans, yes. That's the only time I've had it happen anyway.

Just an aside. I don't soak my beans before cooking. I leave them in the freezer for several days. They seem cook faster that way. At least as fast as if soaked.
