freezing shredded chicken

I cooked a whole chicken in a slow cooker. Shredded it and divided it into small freezer bags. I defrosted a bag overnight in the refrigerator. The chicken was very moist, I could squeeze a small amount of water out of it. Any way to prevent this?

I've been wrapping things in plastic wrap first, then put in a freezer bag. A tip I read somewhere. It's been helping keeping the ice crystals off the foods. It has to be snug. If you have some around, try it and see if it helps.

Lay the chicken out on wax paper on a cookie sheet and put it in the freezer just long enough to make it firm. Then transfer it to a bag and squeeze out as much air as you can from the bag. Or, better yet, use a vacuum sealer.
