Surveillance System without Third Party?
Hello,
after searching for a good surveillance system for my home, I only found systems which uses third party service to monitor the system. Example Ring.
Since they are collecting your data and who knows what they do with it, I am trying to find a system that does not use third party service but lets me monitor the system through my phone.
Does this even exist these days?

First, be clear about what you are calling a "service". A service could be any number of companies but the important questions is what do you want to do with your system?
Try looking at web enabled baby monitors and cat/dog cameras. I have several around the house to keep an eye on the cat when we travel. There is no "service" but I have an app on my phone that allows me to view multiple cameras.
If you want to store video for later use you can purchase your own recorder (DVR). They can record multiple cameras simultaneously. Depending on the version you get they have varying levels of internet accessibility. These systems are commonly used in commercial applications where nobody is viewing footage online but will search for specific events like a crime to look for evidence.
If you say "I don't want to buy and setup a DVR" or "I want everything stored in the cloud so I can access all of it anytime and from anywhere"... then you probably need a commercial, paid service. Part of their fee is paying them to maintain the computers to record all the data your cameras are putting out. But, as you pointed out someone else will be in possession of your video data.

There are some systems that offer paid cloud plans, but you can opt out of their use and use local storage instead.
Whether clips are still sent to their servers or not, I'd assume not - since you're not paying them to store it. But it might need some research to prove one way or another.

I was thinking of Ring, but then I read that there are some concerns on how they use all the collected data.
Known fact of Amazon. I also assume that this will be the case with any other monitoring service.

You keep saying "monitoring". That is a term often used with alarm systems. If tripped the alarm system automatically calls the monitoring service who then contacts police or fire departments. Instead, I assume you are wanting video hosting where your video feed is sent offsite via the internet to be stored by a 3rd party. Online hosting of your video surveillance usually does NOT have monitoring. Nobody is "monitoring" your video to determine if it's your kid taking their bike from the front yard or a thief stealing it.

LOL, this is one area where I struggle to understand what anybody would ever do with weeks/months of video of someone's front steps with an occasional delivery person.
