Drywall and insulation around B-Vent

Hi. I hope I am posting this in the right location as it involves a few different things. When I was in the process of buying my home it had a brick chimney in the garage for the HVAC exhaust. The owners had to have it replaced with a B Vent due to the condition of the chimney upon inspection. That happened. The roof was old and there was leaking on around the b vent (located in the garage). I have since had a new roof put on my home and it is no longer leaking. There is some water damage to the drywall and the insulation on the garage wall. The other side of this wall is my utility room. My neighbor looked at it one day and told me he could smell mold even though I can't. Long story short I need to put in some new insulation and drywall. I have never done any work with drywall or insulation and I'm not sure what to do off the top of my head as far as materials and method. Half of me wants to get a handy man to do this and the other half of me wants to save a couple bucks and do it myself. I am moderately handy learn fast, but I also don't want to bite off more than I can chew and give myself a headache. Any advice would be great. I would like to get this done before winter.
