Replace gas water heater venting

I 've been having water issues with my current water heat and i am looking to replace it along with replace the tube venting. The replacement of the water seems pretty straight forward. The pipe venting is where i have some questions. The current pipe venting is straight up no bends. So depending on how my BTU the new water heater will determine the pipe diameter either a 3" or 4", i am looking at a 50 gal water heater.

In replacing the current pipe venting i am needing some 3" or 4" stainless steep pip, roof flashing, roof cap, rain collar and draft hood.
Double wall pipe?

what is the national code in replace the pipping on the roof, dimensions,
how many feet from ridge of the roof, how high does it have to be?
